Tuna with Tomato Sauce, Leek and Blond Beer

TUNA WITH TOMATO SAUCE, LEEK AND BLOND BEER

INGREDIENTS
400g fresh tuna
100g ripe tomatoes, peeled and
finely chopped
2 shallots, peeled, thinly sliced
1 small leek, thinly sliced
2 tsps Cajun spices
4 tbsps fish stock
3 tbsps sunflower or olive oil
150ml blonde beer
salt and freshly ground black pepper

METHOD
Cut the tuna into slices or cubes and
season with salt. Heat the oil in a
frying pan or wok and lightly brown the
tuna. Remove from the pan and set aside.
To the pan add the tomatoes,
shallots, Cajun spices, fish stock and
blonde beer and simmer for 10 or
15 minutes.
Add the tuna to the pan. Season with
salt and freshly ground black pepper.
Cook the leek slices in a pan of
boiling water for two minutes (until
‘al dente’).
Serve the tuna with the sauce, slices
of leek and French bread or ciabatta
and a glass of blond beer.
