Orval Brewer's Soup

ORVAL BREWERS’ SOUP
Serves 4

INGREDIENTS
1 bottle of Orval Beer
2 pints of well-seasoned beef stock
2 teaspoons of cornflour
1/2 pint of milk
1/4 pint of single cream
2 egg yolks
Salt, pepper and a little nutmeg
to taste

METHOD
Put the beef stock and beer in a pan,
season with salt and pepper and a
little nutmeg. Bring to the boil, then
lower the heat and simmer for at least
10 minutes
Dilute the cornflour in the milk to
make a paste, add to the soup and
whisk to prevent lumps from forming. Bring
back to the boil.
Beat the yolks together with the
single cream in a bowl then add to
the soup stirring well. Bring back to the boil
while stirring all the time.
Serve in bowls with a glass of Orval
and some chunky bread or a
warmed roll
To add more body to the soup you could
throw-inn some split peas, lentils or barley
