Whitstable Bay Potted Shrimp
WHITSTABLE BAY POTTED SHRIMP
1 lb /450g small shrimp, shelled
8oz / 225g of clarified butter
2 tsp fresh lemon juice
1 pinch of nutmeg
1 pinch of ground mace
1/4 tsp cayenne pepper
salt & pepper
1 pint of Whitstable Bay Organic Ale
1. Fill a large pan with the beer and bring
it up to 3/4 full with cold water, add a
handful of salt. Once it is boiling rapidly, add
the shrimp and after a minute begin tasting
them. When they are cooked through drain
2. Stir in the lemon juice, nutmeg, mace,
cayenne, salt and pepper into the shrimp
and place them into ramekins or other small
dishes. Top them up with the clarified butter
until they are covered. Refrigerate immediately.
3. Once the butter has set, they are ready
to serve, accompanied by brown or white
bread and a pint of Whitstable Bay Organic Ale.
